Ok, so I used to love to cook…. not so much these days, it just seems like another chore, another job to add to the list for the day. Don’t get me wrong, I know my family appreciate what I cook, it just feels like you put all that time in for something to be gone in 1/2 hr.
Baking used to be my biggest love, but since I now have Gluten Free members in the house, it is just not the same, it doesn’t have the same flavor, the same consistency…. but for the sake of my hips, maybe this is a good thing!

So this year, I have set myself a challenge….. 2 actually!
1. Find a new recipe each week and try it. It can be any sort of dish, savory or sweet etc.
2. Find a recipe each week to use the expensive ornament, I have sitting on my kitchen bench, aka my Thermomix. I bought this about 4 years ago and apart from using it as a food processor and weighing stuff on it, I have barely used it. I have friends who have used theirs all the time, so this year, at least once a week I have to find a recipe and use it.

Sooooo, I just happened to flick on Jamie Oliver cooking one day and he was effortlessly cooking up this sausage dish. John came in half way through and reckons mmmm that looks good, which actually surprised me as he is not usually a fruit in a savory dish sort of person.
So yep let’s give it a try! The recipe had chipolatas in it but Jay had bought chicken and spinach sausages that day, so I used them instead.
Let me just say YUM!!!!!
So so easy (only 5 Ingredients) and so tasty and will definitely become a regular in our house.

Jamie Oliver’s five ingredient sausage and apple bake
. 2 large red onions
. 2 eating apples
. 4 parsnips
. 12 chipolatas
. 1 tablespoon honey

1. Preheat the oven to 180C. Place a large non-stick ovenproof frying pan on a medium-high heat.
2. Peel the onions, cut into quarters and quickly break apart into petals directly into the frying pan, tossing regularly, then add 1 tablespoon of olive oil and a pinch of sea salt and black pepper. Quarter and core the apples, then toss into the pan.
3. Use a speed-peeler to peel the parsnips into long strips.
4. Stir 1 tablespoon of red wine vinegar (I had none so used balsamic vinegar) into the frying pan, then pile the parsnip strips on top of the apples and onions.
5. Lay the sausages on top, then drizzle with 1 tablespoon of olive oil and add a pinch of black pepper from a height.
6. Bake for 30 minutes, then drizzle over the honey and return to the oven for 5 minutes, or until golden and delicious. (I turned the sausages towards the end of cooking as they didn’t seem to be cooking all the way through).

. No sausages… use chicken thighs or drumsticks, meatballs or even big chunks of pumpkin instead.
